Start by peeling the potatoes and cutting them into fries. Rinse them under cold water and pat dry with a kitchen towel.
Heat olive oil in a large frying pan over medium heat and add the potato fries. Cook until golden and crispy, about 20-25 minutes, turning occasionally. Season with salt and black pepper.
While the fries are cooking, heat another pan over medium heat and add a little olive oil. Slice the onions and sauté them until they are soft and translucent.
Add the fresh sausages to the pan with the onions and cook until they are browned and cooked through, about 10-15 minutes. Remove from heat and slice the sausages into bite-sized pieces.
In a small bowl, mix the ketchup and curry powder until well combined. Adjust the seasoning with salt and black pepper to taste.
To serve, place the sliced sausages on a plate, drizzle the curry ketchup over them, and serve alongside the crispy fries.
