Soak the rice noodles in warm water for about 20 minutes or until softened, then drain and set aside.
In a large pan or wok, heat a tablespoon of oil over medium heat and add minced garlic, cooking until fragrant.
Add the prawns to the pan and stir-fry until they turn pink, then push them to one side of the pan.
Crack the eggs into the pan and scramble them until just set, then mix with the prawns.
Add the soaked noodles, soy sauce, fish sauce, and brown sugar, tossing everything together until well combined.
Stir in the beansprouts, chopped spring onions, and half of the peanuts, cooking for another minute.
Serve the Pad Thai garnished with the remaining peanuts, fresh coriander, and lime wedges on the side.
