Dice the courgette, aubergine, green pepper, onion, and tomatoes into small pieces.
In a large skillet, heat the olive oil over medium heat. Add the onion and green pepper, and sauté until softened, about 5 minutes.
Add the diced aubergine and courgette to the skillet, cooking for another 5-7 minutes until they begin to soften.
Stir in the diced tomatoes and paprika, and season with salt and black pepper. Cook for an additional 10-15 minutes, stirring occasionally, until all the vegetables are tender and the mixture is slightly thickened.
In a separate frying pan, heat a little olive oil over medium heat. Crack the eggs into the pan and fry them to your desired doneness.
Serve the pisto hot, topped with a fried egg on each serving.
