Heat the olive oil in a large skillet over medium heat. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes.
Add minced garlic, sweet paprika, and cumin to the skillet, stirring for another minute until fragrant.
Chop the tomatoes and add them to the skillet. Season with salt and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the sauce thickens.
Make small wells in the sauce and crack the eggs into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are set to your liking.
Remove from heat, garnish with fresh parsley, and serve hot with crusty bread.
