Cook the jasmine rice according to package instructions and set aside.
In a large pan, heat the olive oil over medium heat. Add the green curry paste and sauté for 1-2 minutes until fragrant.
Add the chicken breast, cut into bite-sized pieces, to the pan and cook until browned on all sides.
Pour in the coconut milk and stir well to combine with the curry paste. Bring to a simmer.
Add the green beans and cook for about 5-7 minutes, or until the beans are tender and the chicken is cooked through.
Season with salt and black pepper to taste. Squeeze in the juice of half the lime for added freshness.
Serve the green curry over a bed of jasmine rice, garnished with lime wedges.
