Rinse the rice under cold water until the water runs clear, then cook it according to package instructions. Set aside once done.
While the rice is cooking, wash and chop the broccoli into small florets, slice the carrot thinly, and dice the red bell pepper.
In a large skillet or wok, heat the olive oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Add the chopped broccoli, carrot, and red bell pepper to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
Once the vegetables are cooked, add the cooked rice to the skillet, followed by the soy sauce. Stir well to combine all ingredients.
Season with salt and black pepper to taste, and stir-fry for an additional 2-3 minutes until everything is heated through.
Remove from heat and serve immediately, garnished with sesame seeds or spring onions if desired.
