Heat the olive oil in a large paella pan over medium heat.
Add the chopped onion and minced garlic, sauté until softened and fragrant.
Cut the chicken breast into bite-sized pieces, season with salt and pepper, and add to the pan. Cook until browned on all sides.
Stir in the chopped red bell pepper and cook for another 2-3 minutes.
Add the paella rice, sweet paprika, and saffron, stirring to coat the rice in the oil and flavors.
Pour in the chicken stock and bring to a boil. Reduce the heat to low and simmer for about 20 minutes without stirring.
After 20 minutes, sprinkle the green peas over the top, cover, and cook for an additional 5 minutes.
Remove from heat and let the paella rest for 5 minutes before serving.
