Peel and thinly slice the potatoes and onion.
Heat the olive oil in a large non-stick frying pan over medium heat. Add the sliced potatoes and onion, seasoning with salt, and cook gently until the potatoes are tender, about 15 minutes.
Once the potatoes are cooked, drain them from the oil and let them cool slightly.
In a large bowl, beat the eggs and season with a pinch of salt. Add the cooked potatoes and onion to the egg mixture and gently combine.
Return a small amount of the olive oil to the frying pan and heat over medium-high heat. Pour in the potato and egg mixture, spreading it evenly.
Cook for about 5-7 minutes until the bottom is set and golden brown. Carefully flip the omelette using a large plate, cooking the other side for another 5 minutes until fully set.
